PURPOSE:To prepare a fat and oil composition having air-retainability in high efficiency without necessitating tempering process, by quenching and kneading a high-melting fat and oil to a specific temperature and mixing and dispersing in a liquid oil having low melting point. CONSTITUTION:A fat and oil having a relatively high melting point and selected from an animal or vegetable oil such as fish oil, soybean oil, etc., hardened oil, fractionated oil and their ester-interchanged fat and oil having a melting point of 25-60 deg.C, preferably 33-55 deg.C is melted with heat and the molten fat and oil is quenched and kneaded with a cooling kneader to a temperature corre sponding to an SFC of 30-60%. The high-melting fat and oil is mixed and dispersed with a liquid oil having a relatively low melting point (<=30 deg.C) and viscosity adjusted to 50-200 cp. preferably with a high-speed shearing mixer such as line mill, colloid mill and a stirrer e.g. roll mill, impingement stirrer such as ultrasonic stirrer or continuance kneader, etc., to obtain the objective composition. |
