Freely flowing fat-contg. powder is prepd. by concentrating a corresp. fat-contg. liquid, spray drying the concentrate, sepg. and re-circulating a small-particle fraction of the product obtd., adding a lecithin-contg. agent, conditioning and cooling. The concentrate and the aent are simultaneously but separately atomised such that the concentrate spray cones intersect whilst the agent and the recirculated fine fraction predominantly enter the overlap zone of the cones. The respective spray cones are pref. (downwardly) directed at the same end of the spray drying unit whereby the top of the agent spray cone is symmetrically arranged relative to and higher than the tops of the concentrate cones.
