<p>The aim of the invention is the treatment of curds (5) obtained from milk (1) which has been pretreated in order to coagulate the casein of the milk and precipitate serum proteins, through a microfiltration loop (30) comprising at least one cartridge (34) with ceramic tubes (36) so as to separate the cheese from the serum. The device comprises high pressure sequential backblowing means (39, 43, 44) by reverse permeation during a short time without interrupting the continuous microfiltration. Advantages: lifetime, no clogging, cleaning and sterilization with all acid or base products used in milk industries, insensitivity to pH, quality of the product, low transmembrane pressure, high yield.</p> |
