PURPOSE:To produce a marine paste product without damaging qualities such as gel strength, taste, etc., even by using whey protein as an extender in high ratio, by denaturing and gelatinizing whey protein by heating. CONSTITUTION:Whey protein is mixed with a stabilizer such as locust bean gum, xanthan gum, etc., dissolved in water, etc., heated at about 85 deg.C for about 40min, denatured and gelatinized. Then a raw material for a marine paste product in a manufacturing process, such as ground fish kneaded with salt, is blended with the denatured and gelatinized whey protein, subsidiary raw materials such as starch, glair, sugar, MIRIN (sweet sake, etc.) and water and successively heat-treated by a conventional procedure. |
