PURPOSE:To produce a fat or oil composition, having excellent freezing resistance without deteriorating quality in production process or refrigerating preservation even when nonfat milk solid is used in a large amount, by using diacetyltartaric acid monoglyceride as an emulsifying agent. CONSTITUTION:An aqueous phase containing nonfat milk solid, e.g. skimmilk powder, whole milk powder, etc., in an amount of about >=5wt% based on the total composition is heated to about 65-70 deg.C. An emulsifying agent consisting essentially of diacetyltartaric acid monoglyceride is separately added to a fat or oil, e.g. cacao fat, coconut oil, palm kernel oil, etc., and melted while heating. The resultant melt is then added to previously emulsify the above- mentioned aqueous phase. The obtained emulsion, if necessary, is homogenized, sterilized, then homogenized, cooled and aged to afford the aimed creamy fat or oil composition. |
