PURPOSE:To provide an antioxidant which is safe, has a potent anti-oxidant activity, causes neither lowering in the pH of products nor the emission of formalin and can prevent smell from being aggravated, containing a diester (salt) of phosphoric acid derived from tocopherol and ascorbic acid as an active ingredient. CONSTITUTION:An antioxidant is formed by using a diester of phosphoric acid of the formula (wherein R1 and R2 are each H or CH3) or a salt thereof as an active ingredient. The diester of phosphoric acid of the formula can be obtd., by e.g., reacting tocopherol with a halophosphate esterifying agent, reacting the reaction product with ascorbic acid wherein hydroxyl groups of the positions 5 and 6 are protected, and removing the protective groups from the reaction product. As the salt of the diester of phosphoric acid, inorg. salts such as sodium salt and org. amine salts such as aminomethylpropanol salt can be used. The resulting antioxidant is suitable for use in the fields of foods, medical supplies, cosmetics, etc.
