The use of photoelectric relays is indispensable for automatic control of dough rolling machines. However, these photoelectric relays easily become choked with flour. For cleaning the light source and the photodiode 3 of the photoelectric relay, a double angular arm 5 which can be hinged in rotation about a shaft 10 is provided. A brush 20 is fixed to the lower end of the part 6 of the double arm 5 which is disposed substantially vertically. The arm 7 of the double arm 5, disposed substantially horizontally, is curved downwards in its outer portion 12. A spring 14, 15, 17 holds the photoelectric relay cleaner in its normal position. When the dough rolling process is finished, the upper dough roller 2' situated in a lower final position is returned to its initial position 2. In this movement, the shaft 1 of the dough roller pushes the shaft 7 upwards, whilst the brush 20 fixed to the lower end of the vertical shaft 6 moves above the photodiode 3 or the light source of the photoelectric relay, and cleans it. <IMAGE>
