PURPOSE:To preserve perishable foods, especially vegetables and fruits, having excellent freshness and flavor after preservation, by packing foods and an organic and an iron type desoxidants into a small closed oxygen permeable container. CONSTITUTION:Foods are packed into a container having no or low oxygen permeability, closed, an organic desoxidant to generate a carbonic acid gas and an iron type desoxidant not to form the carbonic acid gas are added to the container and the gas composition in the closed container has <=7% oxygen, 10-0.5% carbonic acid gas and 99-82% nitrogen to preserve the foods. The foods in the closed container are cooled at a temperature <=4 deg.C and not to freeze at all or hardly freeze the foods. Further the closed container has preferably tough structure and can be repeatedly opened and closed, or is preferably a refrigerator.
