A gelling agent consisting essentially of a mixture of 30 SIMILAR 90 wt. parts of xanthan gum and 10 SIMILAR 70 wt. parts of konjakmannan is disclosed. The gelling agent is used in an aqueous solution having pH of 3.0 SIMILAR 12.0. A quantity of the gelling agent is usually in a range of 0.2 SIMILAR 4.2 wt.% of the final product to be prepared. Any additive may be incorporated if necessary. Gel produced by utilizing the gelling agent has excellent hardness, elasticity, thermoreversibility and water-holding property.
