PURPOSE:To obtain a low-caloric and high-protein food having flavor and chewiness equal to those of meat product sausages, by kneading bean curd adjusted to a specific moisture content with cattle meat, starch and a Chinese yam, further adding a seasoning, etc., kneading the resultant blend, filling the kneaded blend in a baglike packaging material and smoking the packaged blend. CONSTITUTION:(A) Bean curd in an amount of preferably 45-55wt% adjusted to preferably 55-75wt%, preferably 65-70wt% moisture content is kneaded with (B) preferably 15-25wt% cattle meat, (C) preferably 25-35wt% fish meat, (D) preferably 3-8wt% starch and (E) preferably 1.5-3wt% Chinese yam until viscosity is increased. A seasoning, spice, etc., are then added to knead the blend and the kneaded blend is filled in a baglike packaging material and smoked to afford the aimed sausage. |
