CONSTITUTION:(A) Bean curd in an amount of preferably 45-55wt% adjusted to preferably 55-75wt%, preferably 65-70wt% moisture content is kneaded with (B) preferably 15-25wt% cattle meat, (C) preferably 25-35wt% fish meat, (D) preferably 3-8wt% starch and (E) preferably 1.5-3wt% Chinese yam until viscosity is increased. A seasoning, spice, etc., are then added to knead the blend and the kneaded blend is filled in a baglike packaging material and smoked to afford the aimed sausage.
