<p>PURPOSE:To easily prevent the discoloration of potato and to save utilities and labors necessary for blanching, by treating a potato with a solution containing tocopherol, gallic acid and L-ascorbic acid (derivative) at specific ratios. CONSTITUTION:Potato is treated with an aqueous solution containing (A) 0.001-10wt%, preferably 0.01-1% tocopherol, (B) 0.0001-5%, preferably 0.001-1% gallic acid and (C) 0.001-10%, preferably 0.01-1% L-ascorbic acid or its derivative.</p> |
