PURPOSE:To efficiently produce granular oolong tea capable of providing a leachate solution having excellent aroma, flavor and hue in a short time, by granulating moderately fermented tea leaves. CONSTITUTION:Weight of raw tea leaves is reduced by about 10-20% using a method for wilting in the shade or artificial wilting and the wilted tea leaves are then transferred to wilting in a room to promote fermentation of parts around the tea leaves. The resultant moderately fermented tea leaves are subjected to milling, rolling, pressing, kneading, etc., to provide tea leaves in a wet state. The obtained teat leaves are directly granulated or initially dried and then granulated into grains having 5-10mm diameter, which are dried.
