<p>PURPOSE:To produce frozen dried persimmons, preservable for a long period and capable of providing soft flesh with directly sustained sweetness without causing discoloration or growing molds, by peeling skin of astringent persimmons, smoking the peeled persimmons, naturally drying the persimmons and quick-freezing the dried soft persimmons when sweetness has increased. CONSTITUTION:Astringent persimmons are peeled, smoke with sulfur smoke and then naturally dried for about 20 days. The ripe persimmons having flesh softened by natural drying and increased sweetness are directly or placed in a container, hermetically sealed with a resin film and quick-frozen to about -18 deg.C.</p> |
