PRODUCTION OF BLUE PIGMENT COMPOSITION

PURPOSE:To obtain a blue pigment compsn. which has a stable potent beta- glucosidase activity, by treating a soln. contg. iridoid glycoside originating from the fruit of Gardenia jasminoides Ellis with a specified immobilized yeast and then adding a compd. having a primary amino group thereto. CONSTITUTION:Yeast lipomyces starkiye or lipomyces lipoferus is immobilized with a carrier and the immobilized yeast is packed into a column. A soln. contg. an iridoid glycoside originating from the fruit of Gardenia jasminoides Ellis is passed through the column packed with said yeast to thereby hydrolyze said glycoside, thus obtaining a soln. contg. the iridoid compd. A compd. having a primary amino group is added to said soln. contg. the iridoid compd., and the mixture is heated with stirring to obtain the desired blue pigment compsn. It is desirable that the pH of the column is kept weakly acidic, particularly at a pH of 3-5.
