摘要 PURPOSE:To enable the preservation of a cooked rice food such as NIGIRIZUSHI (vinegared rice topped with raw fish meat) at normal temperature almost completely preventing the degradation and drying of the food and to keep the freshness of the titled food over a long period with little change in its taste, by covering the food with a coating film of a gelled cold-resistant colloid for food. CONSTITUTION:A cooked rice food 1 such as NIGIRIZUSHI, rice ball, seasoned rice, etc., is coated with a gelled cold-resistant colloid film 3a for food and stored e.g. in a storage container 2 e.g. by sealing (4) the top opening of the container. As an alternative method, a mixture of e.g. water, sugar and a food- gelatinization agent is put into a storage container, a food 1 is thrown into the mixture, the container is sealed and the content is heated and stored e.g. in gelatinized state.
