Process for the digestion and fermentation of starch-containing raw materials with zero, low, moderate or high autoamylolytic activity in uncomminuted or precomminuted state under atmospheric pressure in which dispersion of the mixture of raw materials and starting substances is followed by addition of an enzyme combination for liquefaction and saccharification, which consists of malt and a combination of various mould amylases, according to Patent No. 3625324. The enzyme combination has approximately the following composition in per cent by weight: 80% cured malt with very high alpha -amylase activity, 16% rhizopus amylase concentrate obtained from a mould of the genus Rhizopus, 1.5% fungal alpha -amylase concentrate obtained from Aspergillus oryzae, 2.5% glucoamylase concentrate obtained from Aspergillus niger.
