PURPOSE:To obtain dried granules of sweet potato having low sweetness in spite of flavor of sweet potato, low specific volume, showing excellent reconstitution with water even by water addition and no greasiness, by using sweet potato of low beta-amylase activity as a raw material. CONSTITUTION:Sweet potato of low beta-amylase activity is washed, peeled, heat- treated and ground. Then water content of the ground sweet potato is adjusted to preferably about 35-45%. The sweet potato is cooled to about 15-20 deg.C and kept at about 15-20 deg.C for about 1-2hr so that starch in a blend is aged. Then the sweet potato is slowly stirred and granulated to give dried granules of sweet potato which comprise >=80% granules having 40-200 meshes particle diameter, have about 600g/l specific volume and >=50% gelatinization degree. |
