PURPOSE:To obtain the titled product free from harsh taste and starchy smell and giving the taste and flavor of agar to the palate, by acidifying an agar extract or fine particle of agar. CONSTITUTION:The objective product having a pH of 2.5-5 can be produced by adjusting the pH of an agar extract or fine particles of agar with edible vinegar, hydrochloric acid, weak acid salt of an alkali metal, etc. the fine granule of agar can be produced e.g. by finely pulverizing agar e.g. with a three-roll mill and eluting the content with water. |
