PURPOSE:To prepare low-calorific cereal preservable over a long period, by extracting and removing carbohydrates, especially sugars from cooked cereal and optionally adding a thickener and an excipient to the treated cereal. CONSTITUTION:Cooked cereal such as rice, barley, etc., is extracted with a sufficient amount of water or a diluted acid such as acetic acid, phosphoric acid, etc., of >=60 deg.C under a condition to keep the viscosity of the extracted liquid to <=200cp during the extraction process. Carbohydrates, especially sugars are extracted and removed from the cereal by this process. The cereal having decreased carbohydrate content is optionally mixed with edible fiber such as carrageenin, pectin, etc., as a thickener and excipient and with a seasoning such as salt, soy, sodium glutamate, etc. |
