PURPOSE:To produce a yeast extract with a high 5'-ribonuclotide content and excellent tastiness, by heat-treating yeast cells and autolyzing the cells. CONSTITUTION:Microbial cells of an edible yeast belonging to the genus Saccharomyces, Candica, etc., are suspended in water so as to provide about 5-15wt% expressed in terms of dry weight and heated at 55-70 deg.C for about 5-20sec. The heat-treated aqueous suspension of the yeast is then adjusted to pH8-10 and kept at about 35-50 deg.C temperature for about 4-10hr to autolyze the yeast. Insoluble substances are then removed and, as desired, 5'- adenylic acid deaminase is reacted in a suitable step after the autolyzing. |
