<p>PURPOSE:To obtain a product having a fixed dehydration ratio, by exposing a food to be treated to shower of a dehydrating solution and dehydrating the food with a small amount of the dehydrating solution repeatedly. CONSTITUTION:A dehydrating solution 3 is showed from shower nozzles 4 on a food to be treated put in a closed container 1. The dehydrating solution 3 is circulated and used by a circulating means 5. When dehydrating treatment is carried out by making the closed container 1 in vacuum state by a pressure reducing means 10, the dehydrating solution 3 takes out water from the food to be treated, the water contained in the solution is evaporated to adjust concentration and the food to be treated can be dehydrated without raising the liquid temperature of the dehydrating solution 3.</p> |
