PURPOSE:To produce frozen TOFU (bean curd) having branded letter, pattern, mark, etc., on the surface without damaging qualities of the product, by branding the surface of frozen TOFU in a dry state. CONSTITUTION:The surface of frozen TOFU in a dry state of usually 4-12%, preferably about 6-10wt% water content is optionally coated with a solid or liquid saccharide. Then a brand having formed a protruded proper mark such as letter, pattern, sign, etc., made of metal or ceramic is heated to a suitable temperature of about 150-500 deg.C and is pressed on the surface of the frozen TOFU. |
