摘要 PURPOSE:To suppress browing of individual phytic acid and reduce acid taste without deteriorating the ability of the phytic acid to form a chelate, by adding cyclodextrin to the phytic acid. CONSTITUTION:Cyclodextrin in an amount of preferably 1-100wt% is added to phytic acid. The cyclodestrin may be any one of the alpha-, beta- and gamma-isomers and a mixture thereof may be used.
