摘要 PURPOSE:To prepare a chocolate crunch having low chocolate content and giving soft feeling to the plate, by rubbing a kneaded chocolate raw material mixed with small edible pieces into a bottom-opened molding frame, removing the frame when only the surface part of the chocolate raw material is solidified and cooling the formed raw material. CONSTITUTION:(A) Small pieces of edible material such as nuts are mixed and kneaded with (B) molten chocolate at a volume ratio of <=20% to obtain a kneaded chocolate raw material. The material is transferred with a feed roller 3, supplied to a bottom-opened molding frame M placed on a transfer belt conveyor 10 and preheated in a mold-preheating chamber 1 and rubbed into the frame M with a leveling roll 4 and a rubbing plate 5. After solidifying only the surface layer of the raw material with a cooler 6, only the molding frame M is extracted upward with a demolding apparatus 8 and the remaining raw material is cooled and solidified with a cooler 9 to obtain the objective chocolate crunch P.
