Edible matter consisting of a cellulose regenerated from an aqueous solution of an alkali metal hydroxide and having a crystal type of cellulose II and at least one guest component selected from the group consisting of polypeptides and edible polysaccharides. At least 10 % of the cellulose II or a homogenous mixture of the cellulose II and an edible polysaccharide exists in the edible matter in the form of a sea component or a continuous phase. The edible matter described above is prepared by the steps of dissolving or dispersing at least one guest component selected from among the polypeptides, the edible polysaccharides and living body constituents consisting of these polypeptides and polysaccharides, either directly or after it is dissolved or dispersed in the aqueous alkali solution, into the aqueous alkali solution in which up to 50 parts by weight, based on 100 parts by weight of the dissolved cellulose, of an undissolved cellulose is swollen or dispersed, thereby to prepare a dope in which at least 50 % by weight of the whole guest component is dissolved, extruding the dope through an extruder, solidifying, neutralizing and washing the extrudate with water and drying the extrudate, whenever necessary. |
