To decrease the impurity content of the diffusion juices employed in sugar manufacture, beet chips are subjected to an incomplete extraction by diffusion in 10' to produce a sweet juice J1 which is conveyed into sugar manufacture 16 to 22 and the chips are next subjected to a second extraction by diffusion in 10'' to produce a sweet juice J2, which is fermented in 24 to obtain a wine which is conveyed to the distillery 26, and pulps B which are pressed in 12, the liquors from pulp pressing being employed, at least partially, as solvent in the second operation of extraction by diffusion. <IMAGE>
