PURPOSE:To obtain the titled fiber having excellent dispersibility in an aqueous system, good palatability, readily mixable with foods, etc., by grinding insoluble food fibers of non-crop type while exerting shear stress action on the fibers in a wet condition and partially subjecting the food fibers to microfibrillation. CONSTITUTION:Insoluble food fibers of non-grain type are ground by the use of preferably a hand mill (power mill) or colloidal mill while exerting shear stress action on the fibers in a wet condition and at least partially subjected to microfibrillation to give the aimed fibers. Fiber selected from cellulose, chitin and chitosan preferably are used as the insoluble fibers of non-crop type and preferably the fibers are preadjusted to 16-100 meshes and ground. |
