The present invention relates to a process and a coagulant for curdling she-camel's milk. It also relates to a she-camel's milk curd obtained by the said process using the said coagulant. The process according to the invention is characterised in that the naturally low soluble calcium content of she-camel's milk is compensated for, at the same time as or before the introduction of the enzyme, by the addition of neutral or acidic calcium salt which is soluble or partially soluble in the aqueous state.
