PURPOSE:To prevent mold lump from attaching itself to a wall face of a culture tank and to cultivate molds efficiently, by sustaining the wall face of the culture tank over a liquid level of a culture solution at a temperature <=the suitable culture temperature. CONSTITUTION:A cooling or heating jacket 4 (optionally may be a coil) in order to sustain a wall face of a culture tank at a temperature suitable for culture is set at a lower part than the liquid level 3 of a culture solution 2 of the culture tank 1 at the outer periphery of the culture tank, a cooling jacket 23 (optionally may be cooling coil or refrigerant header) to maintain the wall face of the culture tank at a temperature <=the suitable culture temperature is laid at an upper part than the liquid level 3 at the outer periphery of an upper wall face 21 and an agitator 10 is fixed rotatably by a motor M. Then the culture solution 2 is fed to the culture tank 1, molds belonging to the genus Aspergillus, Penicilium, Monascus, etc., are into the solution, the agitator 10 is rotated, a refrigerant or a heating medium is sent to the jacket 4 and the culture solution 2 is kept at a suitable culture temperature (20-40 deg.C). On the other hand the refrigerant is sent to the jacket 23 and the upper wall face 21 is cooled to a temperature <=the suitable culture temperature (<=15 deg.C) to carry out culture.
