PURPOSE:To improve protein glutelin preserved in rice by genetic engineering method, to raise nutritive value, to control the protein glutelin content and to contrive to improve food life, by identifying a gene to code the protein glutelin preserved in rice and by developing preparation of the gene. CONSTITUTION:A gene to code protein glutelin preserved in rice is identified by the use of nuclear DNA derived from young leaf of rice plant. The gene is a nucleus-derived gene fragment which corresponding to rice glutelin protein, obtained from cell of rice (Oryza sativa L.), is DNA derived from a nucleus amplified by genetic engineering method and a nuclear fragment, contains a range specified by complementary DNA and Southern blot hybridization method and simultaneously contain a promoter range and initiation. The gene is prepared by separating a gene to code a subunit precursor polypeptide constituting rice glutelin protein from a rice cell and amplifying the gene by genetic engineering method. |
