PURPOSE:To stably, readily, and industrially produce menaquinone-4, by culturing a bacterium having an ability to produce menaquinone-4 while controlling a dissolved oxygen concentration. CONSTITUTION:A menaquinone-4-producing bacterium (e.g. Staphyloccus sciuri) is subjected to ultraviolet ray treatment, N-methyl-N'-nitro-N-nitrosoguanidine treatment and ethyl methanosulfonate treatment to provide the bacterium having ability to produce menaquinone-4. The bacterium is then inoculated in a medium to which alcohols (e.g. isopentenylalcohol), shikimic acid, D-succinyl benzoic acid, etc., are added and cultured at 5-8.5pH and 20-40 deg.C with aeration without limiting the growth of the bacterium, while controlling a dissolved oxygen concentration in a culture medium so that the concentration increases after keeping 0-0.5ppm concentration in a logarithmic growth phase. |
