摘要 PURPOSE:To obtain the titled sticky food, by heat-treating rice grains to give a moisture content somewhat higher than that in eating, drying the rice grains so as to provide a specific moisture content, filling and hermetically sealing the dried rice grains and heat-treating the rice grains under pressure. CONSTITUTION:Rice grains washed with water and dipped are heat-treated to give 59.5-68.5wt% moisture content by steaming, boiling, etc. The moisture content of the rice grains is then reduced by 1.5-4.0wt% and dried so as to provide 58.0-64.5wt% moisture after drying by, e.g. ventilation flow drying treatment, microwave drying treatment, etc. The dried rice grains are then filled and hermetically sealed in a heat-resistant container and heat-treated under pressure to afford the aimed food.
