LOW-FAT OR OIL-CONTAINING COFFEE WHITENER

PURPOSE:To obtain the titled coffee whitener, by blending an emulsifying agent consisting of sucrose ester of a fatty acid having a low HLB value and an organic acid monoglyceride as an essential ingredient and having improved preservation stability. CONSTITUTION:A coffee whitener obtained by blending an emulsifying agent consisting of (A) sucrose ester of a fatty acid having <=6 HLB, preferably a 12-22C fatty acid residue and (B) an organic acid monoglyceride, preferably citric acid monoglyceride or succinic acid monoglyceride as an essential ingredient.
