The process, for treating residual gas from drying the solid residues from olive pressing, uses a fat collector for prim. retention of fatty substances, consisting of an absorbent bed or mesh of absorbent material; a solid filter bed of alkaline material whose main constituent is the ash from burning the dry olive stone residue; a perforated filter bed base, i.e. a screen of material with minimum pore size of 0.1mm.; a container for the bed, made of any acid-resistant material; a transfer and extraction device.
