PURPOSE:To produce an ingredient for foods, not causing collapse of shape even by pouring hot water to absorb water, having a good melt feeling in eating, by treating a raw material mixture blended with a protein subsidiary raw mate rial by twin screw extrusion cooking. CONSTITUTION:Main components consisting essentially of grain flour such as wheat flour, maize flour, etc., and starch powder such as potato powder, sweet potato powder, etc., are blended with about 10-50% based on total raw materials of protein subsidiary raw material such as wheat gluten, beans, fish and shellfish, etc. Then the prepared mixture is fed to a twin-screw extrusion cooking device, about 9-30% based on raw materials of water is fed from a middle water supply vent to the blend, cooked at high temperature and high pressure in the device and the prepared formed expanded material is cut and roasted. |
