PURPOSE:To prepare a jelly food having pastel-colored appearance and excellent palatability, by pulverizing a depilated animal skin after a particular treatment, mixing the obtained emulsion with small pieces of other foods, seasonings, etc., and forming and heating the mixture. CONSTITUTION:(A) A depilated animal skin is immersed in an aqueous solution of hydrogen peroxide, thoroughly washed, immersed in an aqueous solution of sodium bicarbonate to decompose the residual hydrogen peroxide and again washed. (B) A gelatin emulsion is prepared either by (a) mincing the depilated and treated skin, adjusting to 4.5-8.0pH under agitation and pulverizing the product or by (b) heating the depilated skin at 60-100 deg.C and pulverizing the product. (C) The gelatin emulsion is mixed with small pieces of animal meat, fish meat, fish roe, shellfish, fruit, vegetable, algae, etc., together with seasonings. The objective jelly food can be prepared by heating the above mixture. |
