PURPOSE:To easily obtain wheat giving wheat flour having high amylo-viscosity and suitable as a raw material for bread, cookie, noodle, etc., by absorbing abscisic acid in wheat grain under a specific condition and selecting the grains having a lipase esterase activity lower than a specific level. CONSTITUTION:An aqueous solution of abscisic acid is absorbed in wheat grain at 22-28 deg.C for 44-52hr and grains having a lipase esterase activity of <=250 units/10 grains are selected. The determination of the lipase esterase activity can be carried out by absorbing abscisic acid in wheat grains under the above condition, homogenizing 10 grains of the wheat together with 5ml of 0.1mol phosphoric acid buffer solution, centrifuging the homogenized product under cooling, adding fluorescein dibutyrate to the supernatant liquid and recording the intensity of the fluorescence. |
