The method consists in measuring and regulating the physical/chemical parameters which condition fermentation in an accelerated fermentation apparatus so as to obtain a compost of required quality, although the feed and the types of waste vary. The temperature 11, the water content and the product quality are measured and the results are gathered by an on-board microprocessor 12 which transmits the information to the control centre 16. In return, intakes of air or of water are triggered as is the feed of waste or the removal of the compost. <IMAGE>
