发明名称 METHOD AND OVEN FOR THE HEAT CURING OF RAW MEAT PRODUCTS
摘要 In order to avoid having to heat/boil meat media, such as meat, meat offal, fish and the like in metal packages or boiling film, a method is used whereby heating takes place in a plant comprising a pipe (6) in which the meat medium is conveyed while being subjected to electromagnetic waves having a frequency of less than 300 MHz. Electrodes (8, 9 and 13, 14) deriving their energy from one or more generators (12, 17) are arranged around the pipe (6). A continuous heating of the meat medium is hereby effected so that the heating thereof is finished when it leaves the pipe (6) and immediately thereafter while its temperature is still at least 70 DEG C, can be cut into slices or pieces (20) and packed (21, 22). The heating time is only a few minutes as opposed to the conventional boiling in water or steam which takes several hours. By this method it is easy to rearrange to other dimensions just as the use of transparent packing becomes possible which gives the consumer the opportunity to see the article. Finally, the product is of a better quality because fat and stock is not boiled out but remains evenly distributed in the article so that its taste and appearance are improved.
