摘要 |
PURPOSE:To obtain a maltooligosaccharide having high purity in high efficiency, by treating a liquefied starch liquid with a maltooligosaccharide-producing immobilized amylase in combination with an immobilized debranching enzyme. CONSTITUTION:A liquefied starch liquid is treated with a maltooligosaccharide- producing immobilized amylase in combination with an immobilized debranching enzyme. The immobilization of the enzyme can be carried out by carrier-bonding methods including physical adsorption, ionic bonding, covalent bonding, etc. An example of advantageous method for immobilizing the maltooligosaccharide- producing amylase is the use of a porous carried wherein the affinity to enzyme is >=80% and the specific surface area of the pore of >=100Angstrom diameter is 20-300m<2>/g. Since almost all oligosaccharide-producing amylase has the optimum pH of 5.0-8.5, it is preferable to use a debranching enzyme having the same stability and optimum pH range. |
