The present invention relates to the regeneration of cheesemaking brines with restoration of the salt content by means of a clean brine flow passing through a salt silo. According to the invention, the brine flow conveyed to the salt silo undergoes a double, staged, filtration, the first filtration being a filtration on an industrial filter 13 removing the largest particles in suspension and the second filtration having a threshold below 2 mu m, such as microfilter 18, removing yeasts, bacteria and impurities not removed by the first filtration. The invention prevents the pollution and clogging of salt silos. <IMAGE>
