PURPOSE:To obtain normal-temperature distribution products of Crustacea free from occurrence of pinhole, by covering boiled, washed and processed Crustacea with a heat-resistant plastic member with sufficient thickness, packing the covered Crustacea and a drip absorbing material into a heat-resistant multilayer bag, sealing the bag under reduced pressure and heating. CONSTITUTION:Crustacea 1 such as prawn, crab, etc., is subjected to pretreatment such as washing, processing, etc., covered with a heat-resistant plastic member 3 with >=0.5mm thickness and the projected parts of Crustacea are surrounded. The covered Crustacea and a drip absorbing member 2 are packed into a multilayer plastic bag 4, completely sealed in at about 450-680mmHg degree of vacuum and heated at 110-140 deg.C for 5-40min or heated and pressurized (pressure is 1.0-2.0kg/cm<2>). |
