A cheese-like product with a dry matter content of at least 30 per cent by weight in which the major part comprises vegetable materials obtained from protein containing seeds, such as seeds from leguminous plants and/or other seeds rich in protein and optionally including one or more additives; the preparation thereof by ultrafiltration optionally combined with diafiltration of a protein containing extract from seeds without using a coagulant, and the use thereof as a substitute for conventional semi-solid or solid cheese types and as a substitute for meat. |
