<p>PURPOSE:To restore freshness of vegetables having lowered freshness and to improve the taste and palatability of the vegetables, by immersing vegetables in chilled water and blasting air into the chilled water to increase the dissolved oxygen content in the water, thereby promoting the respiratory action of the vegetable. CONSTITUTION:A prescribed amount of water is poured into a water tank 1 and is cooled with a refrigerator 2. Vegetables 6 having lowered freshness and withered to some extent are immersed in the water tank 1 and air is continuously introduced into the water in the water tank 1 through an air supplying nozzle 4 to increase the dissolved oxygen content in the chilled water. After leaving the vegetables over a whole day and night in the state, the vegetables 6 are taken out of the water tank 1 to enable the recovery of the freshness of the vegetable.</p> |
