The method of producing sugar syrup from sugar containing raw materials includes the steps of: a).chopping the raw material and then extracting juice from the chopped raw material; b).to decrease the pH level, the chopped raw material or the juice obtained from step a) is acidified and then heated until the proteins present coagulate; c).the liquor obtained from step b) is then filtered or centrifuged to remove the coagulated proteins; d).the sugar containing solution obtained from step c) is then electrolyzed using active electrodes producing, when dissolved, polyvalent ions which coagulate the colloids present and then the resulting precipitate is removed; e).the solution obtained from step d) is ultrafiltered, then demineralized by electrodialysis and purified using ion exchange; f).the solution of step e) is then passed through a filter with a solvent g).the liquor obtained from step f) is concentrated by reverse osmosis and then evaporated to form a sugar syrup.
