发明名称 PROCESS FOR MAKING SOY SAUCE FROM CORN STEP LIQUOR
摘要 A substitute for soybean sauce was prepd. from corn steep liquor (CSL). Thus, CSL was filtered with a screen of 50μ and concd. with a film-vaccum concentrator so that the solid content became 30-60%. The concd. CSL was treated with 250-600ml 35% HCl using a digester with a steam-sparger for 10-20hr at 100-120≦̸C, adjusted with Na2CO3 to pH4-5, and later with Ca(OH)2 to pH5-7. The neutrallized hydrolysate was passed through a filter contg. SiO2 under vaccum. The filtrate was treated with 0.5-1 wt.% active chorcoal based on the solids for 30-60min at 60-80≦̸C with agitation, vaccum-concd. at 60≦̸C or below, and seasoned to give the final product.
