PURPOSE:To suppress the germination and proliferation of microorganism in fish paste product and to prepare fish paste product stably preservable over a long period, by adding a polyglycerol fatty acid ester to a fish paste product. CONSTITUTION:A polyglycerol fatty acid ester, preferably an ester wherein the polyglycerol has an average polymerization degree of >=6 or hydroxyl value of <=970 and the fatty acid has a carbon number of >=14 is added in the conven tional preparation process of fish paste product at an amount of 0.001-5wt.% based on the fish paste product. |
