PURPOSE:To prepare meat flake having granular and elegant beautiful appearance and deep and savory taste without using water-exposure and dehydration procedures, by using black scraper as a raw material. CONSTITUTION:The head, guts and skin are removed from a fresh black scraper and the fish body with bones is boiled in a round kettle until the meat is separated from the bones. The meat, etc., are taken out of the kettle, left cooling and the bones, bloody meat and foreign materials are removed to obtain dressed meat. The meat is crushed by kneading, put into a flat pan, added with sugar and food dye such as food red, heated over a slow fire under agitation, added with albumen of poultry egg when the water in the mixture is sufficiently evaporated, heated again until the meat is changed into granular form and left to cool. |
