PURPOSE:To prepare the titled processed fish having excellent commercial value, by sucking guts from a body of a male fish without deteriorating the appearance of the fish body and introducing a kneaded mixture of fish roe and binder into the empty belly of the fish. CONSTITUTION:The guts of a male fish such as herring, smelt, sandfish, etc., are sucked and removed without deteriorating the appearance of the fish body by using a nozzle having an inner diameter of 5-20mm at a suction pressure of 35-60kg/cm<2>.G. Fish roe such as roe of smelt, herring, etc., is kneaded with a binder such as probein, etc., at a ratio of 1/(0.01-0.10) and optionally added with 0.8-2.0wt% salt or other seasoning. The kneaded pasty mixture is injected into the empty belly of the fish using a stuffer having an inner diame ter of 5-20mm under an injection pressure of 3-6kg/cm<2>.G. |
