PURPOSE:To efficiently filter only soy sauce, by passing an aged unrefined soy stock solution for soy sauce through a tubular ceramic filter of a filter vessel, filtering the soy cause and returning the concentrated stock solution containing microbial cells and unrefined soy to a container for containing the aged unrefined soy stock solution. CONSTITUTION:An aged unrefined soy stock solution is passed from a container 1 for containing an aged unrefined stock solution through the interior of a tubular ceramic filter 3 of a filter vessel 2. The soy sauce is filtered by cross flow filtration to circulate the concentrated stock solution containing microbial cells and unrefined soy to the container 1. When a filter having about 0.1-3.0mum pore diameter on the filtration surface side of the filter is used, the filtered soy sauce does not require addition of a preservative, etc. |
